Oatmobile Cookies-Ms. Tioga Style!




Hi Everybody!

This recipe is for Oatmeal Cookies. We have always called them Oatmobile Cookies. We have no idea why?!

You will have to adjust the baking time for your Oatmobile Cookies. The baking time below is a guide for the first batch. Look at the cookies in the oven a few minutes before they are timed to be done. Cookies properly baked will be very soft when you try to remove them from the pan. Handle them gently.

1/2 pound (2 sticks) unsalted butter, slightly softened.
1 cup packed Dark Brown Sugar
1/2 cup granulated sugar
1/4 cup water
1 tablespoon vanilla extract (I use imitation vanilla)
1 large egg
1 cup all-purpose flour
3 cups rolled oats
1 teaspoon baking soda

In a large mixing bowl with electric mixer, mix butter until creamy. Add brown and granulated sugars, water, vanilla and egg. Beat until creamy. Combine flour, oats, baking soda and 1 teaspoon salt if desired. Add to butter mixture; mix well.

Drop onto lightly greased baking sheet by teaspoon, about 1-1/2 inches apart. You do not have to roll the dropped cookies into a ball. It is much better to just let them fall as they come off of the spoon.

Bake at 350 degrees for 7-10 minutes. The time to bake will vary with each oven and altitude. Let stand a minute before removing from baking pan. MsTioga's oven makes perfect Oatmobile cookies in 7 minutes.

Remember! You may always bake a batch a little longer, but you may NEVER unbake an overbaked batch of cookies! I let my cookies cool right on my table.

A perfect cookie will be golden brown on the bottom, almost hold its shape on the spatula when you remove them, and look sort of dark brown on top.
