Dinner salad can be different!

 

 

 
 

Hi Everybody!

We love a salad with every supper meal. Sometime ago, we stopped using lettuce in our salads. We think that our salads without lettuce, taste much better.

Our dinner salads now are made from tomato, squash, cheese, radish, carrot and red onions. All of these vegetables are cut up to bite size, with the tomatoes on the bottom, followed by a layer of squash, and all the remaining veggies on the top.

Squash has replaced lettuce in our dinner salads. We like squash because it tastes good, and lasts a lot better in the fridge than lettuce. We use different kinds of squash. Sometimes zuchini. Sometimes yellow squash. Lately here in Mexico, we have been using a light green squash that is found a lot in the groceries.
